We are STILL on the New Years grind for hitting the “refresh” button to your fitness journey! For our students or anyone on a busy schedule with a budget (honestly, who isn’t?) we wanted to share some of our favorite healthy meals that are great to meal prep and don’t break the bank (more $$ to put towards a spin class, right?)
Ground Turkey Bowl
1 Package of Ground Turkey
2 Red Peppers
1 Cup of Brown Rice
Put all ingredients in a saucepan and sprinkle seasoning throughout the mixture. Saute until light brown and enjoy! Super easy and great for meal prepping, add a side of veggies or fruit and you are set!
1 Cup of Crushed Tomatoes
2 Cups of Vegetable Broth
1 Can of Kidney Beans
1 Bag of Frozen Corn
1 Tbsp of Chipotle Salsa
2 Chopped Bell Peppers
½ Packet of Taco Seasoning
Add all ingredients into a crockpot and let it simmer for 4-5 hours. This meal is super easy to cook while you are out during the day and will last for a few meals. YUM!
Southwest Chicken Salad
1 Chicken Breast (Cooked & Seasoned)
1 Southwest Salad Mix
Or make it yourself: Romaine Lettuce, Corn, Salsa, Tomatoes, Croutons, & Tortilla Strips
1 tbsp of Balsamic Dressing
SO underrated! The easiest lunch to take to work or school and super easy to store in your fridge to keep good for the next day!
